Billy’s Raw Chocolate Mousse
Ingredients: Raw Chocolate Nibs,
Hemp Seeds, Agave Nectar, Infinity Greens, Water
Equipment Needed: Vita-Prep Blender
Blend:
8 ounces raw cacao nibs in Vita-mix until turns completely to powder
and starts to become gummy in texture
Add 2 cups warm water and blend for approx 1 minute
Add 3/4 cup agave nectar
Add 2 cups hemp seeds
5) Add 1 tablespoon Infinity Greens,…to catalyze effects of
chocolate!
Add more water as needed to maintain blending, and blend for 1 minute
more
Pour into a glass bowl and place in refrigerator to set for 2 hours.
Serve and Enjoy!!!
**if using a conventional blender, add approx 1/2 the amount of
ingredients and blend at least twice as long.
Billy's Nuggets
Ingredients: Raw Chocolate Nibs,
Hemp Seeds, Cold-pressed Coconut Oil, Agave Nectar, Infinity Greens,
Peppermint Extract
Equipment Needed: Mixing Bowl, Mixing Spoon
Mix dry ingredients:
2 cups chocolate nibs
2 cups hemp seeds
2 tablespoons infinity greens
Add 3/4 cup agave nectar, 3/4 cup coconut oil,
20 drops “Herb-Pharm Peppermint Extract
Mix well and refrigerate for at least 1 hour
Scoop mixture with spoon and shape into balls (1” di) with
fingers and then roll in bowl of hemp seeds. Coconut oil on fingers
will help reduce sticking.
Refrigerate nuggets for at least one hour more. Serve and Enjoy!
Infinity Greens Smoothie
Ingredients: Infinity Greens, fresh
pear, fresh thai coconut water, hemp seeds
Equipment needed: Vita Prep Blender
Blend:
- 1 cup water from fresh Thai coconut. Also simple pure water is
fine if coconuts are not available…although a touch of agave
or honey
will help sweetening.
- 1 fresh pear sliced into quarters and core removed
(for added creaminess, freeze pear beforehand, or add ice)
- 2 tablespoons Infinity Greens
2 tablespoons Hemp Seeds or meat from coconut for added protein

Raw Chocolate Milk
Ingredients: Fresh Thai Coconut,
Cacao Powder, Agave nectar, Infinity Greens
Equipment Needed: Vita Prep Blender
Blend:
1 cup water from Thai Coconut.
scoop meat from inside coconut into blender
(if meat is too hard, use 2 tablespoons hemp seeds)
1 round teaspoon cacao powder
1 teaspoon Infinity Greens
1 tablespoon agave nectar

Raw Chocolate Pudding
Ingredients: Fresh Thai Coconut,
Avocado, Cacao Powder, Coconut Oil, Agave Nectar
Equipment Needed: Vita Prep Blender
Blend:
1.5 cups thai coconut water…also purified water is fine if
coconuts are
unavailable,…more agave will be added.
1 avocado,...needs to be at perfect ripeness
2 tablespoons cacao powder
2 tablespoons agave, or add for desired sweetness
1 tablespoon cold-pressed coconut oil
1 teaspoon Infinity Greens (for catalyzing effects of cacao!)
Chill before serving. Totally smooth, creamy, fabulous!
Berry Chocolate Smoothie
Blend:
1.5 cups pure water
1 frozen banana
1 cup frozen berries
1 round tablespoon Infinity Greens
1 round tablespoon Raw Chocolate Nibs
1 tablespoon cold-pressed Coconut Oil
Delicious….and a total energizer!
Afternoon Tonic
Stir:
1 round teaspoon Infinity Greens
juice of 1 lemon
sprinkle of sea salt
dash of cayenne pepper into a glass of water

Kale Pesto Sauce
Ingredients: Fresh Kale, Roma Tomatoes,
Lemon Juice, Fresh Basil Leaves,
Coconut Oil, Infinity Greens, Sea Salt, Cayenne Pepper

remove stems from leaves of Kale,…the middle vein.
Add to blender:
2 roma tomatoes
juice of 4 lemons
full bunch of kale
1/4 cup fresh basil leaves
2 heaping tablespoons Coconut Oil
(olive oil can be used if preferred)
2 tablespoons Infinity Greens
1 teaspoon sea salt or add as desired
1/2 teaspoon cayenne pepper
Blend until totally smooth…a little water may need to be added
to keep things blending….or an extra tomato.

Tangy Ginger Dressing
Ingredients: Olive Oil, Tahini,
Lemon Juice, Ginger, Tomato, Agave, Cilantro, Carrot Juice, Onion,
Sea Salt
Blend:
3/4 cup olive oil
1/2 cup lemon juice
1/4 cup agave nectar
1/4 cup tahini
1/4 cup carrot juice
1/2 red onion
1 tomato
2 tablespoons cilantro
2 tablespoons chopped ginger
1 round teaspoon sea salt
How could a dressing be so good?
Raw Spaghetti and Marinara
Equipment needed: Vita-Prep Blender
, Cuisinart food processor
Ingredients: Zucchini, tomato, sun-dried tomato, onion, bell pepper,
garlic, ginger, olive oil, dry basil, oregano, thyme
1) Soak 1 cup sun dried tomatoes in 2 cups water for at least a
few hours ahead of time.
2) To make the spaghetti noodles for 2 servings: use shredder blade
(the blade with the little holes in it), run three zucchinis through
the food processor. This will produce noodle/spaghetti like pieces.
Place in metal pot with pure water and add 1 teaspoon sea salt.
Heat pot to warm temperture,…approx. 105 degrees(you can just
test temp. with hand),…this softens the zuch but allows it
to remain raw and enzymatically rich.
4) For Marinara, place ingredients in food processor (use blender
if you prefer sauce to smoother) ::
1 tomato cut in quarters
1 red onion cut in quarters
1 red bell pepper cut into quarters (seeds removed)
1 round teaspoon diced fresh ginger
1 cup soaked sun-dried tomatoes
1 cup soak water from sundried tomatoes
2/3 cup olive oil
2 cloves garlic
1 tablespoon dry basil
1 tablespoon dry oregano
1 tablespoon dry thyme
1 teaspoon sea salt
…..and pulse until desired consistency,…add additional
water as needed.
5) Strain zucchini pasta well. Press pasta into strainer to remove
remaining water.
6) Pour sauce over zuch pasta and garnish with sun-dried olives
and avocado slices.
Dang this is good!!!!
Raw Cole Slaw
Equipment Needed: Cuisinart Food
Processor, Vitamix Blender
Ingredients: Purple Cabbage, Carrot, Red Onion, Celery Seed, Lemon
Juice, Olive Oil, Dry Thyme, Sea Salt
1) Using shredder blade in food processor:
1 head purple cabbage
2 carrots
1 red onion
2) Blend in Vitamix:
1/2 cup lemon juice
1/5 cup olive oil
1 tablespoon celery seed
1 teaspoon sea salt
1/2 teaspoon dry thyme
3) Mix ingredients together in a large bowl and enjoy!
Raw Gazpacho
Blend in Vita-Prep:
2 cucumbers peeled and seeds removed
4 roma tomatoes
1 red bell pepper, seeds removed
1/2 onion, peeled
1/2 avocado
1/4 cup olive oil
1/4 cup lemon juice
1 cup carrot juice
1 tablespoon dill
1 tablespoon oregano
1/2 tablespoon chili powder
1 tablespoon dry chives
1/2 tablespoon sea salt
- ** add extra water for desired consistency.
This is incredibly refreshing on a summer day!
Best Guacamole!!!
Select avocado of perfect ripeness
and scoop into bowl.
Add juice of one lemon and sprinkle of sea salt.
Mash together with a fork.
Serve with flax seed crackers or celery or cucumber slices.
So easy,…so good.
Raw Oatmeal
Place 1 cup rolled oats in bowl
and mix with 1 3/4 cups pure water.
Let stand at room temperature overnight, and it will thicken to
perfection.
Add scoop of raw almond butter, dab o’ maple syrup or agave
nectar, and sprinkle of sea salt
Garnish with raw nuts and seeds of your choice.
**a variation that takes it to the next level: use fresh coconut
water in place of water.
Simple, yet satisfying!
Raw Cream of Beet Soup
Add to vitamix:
1) 1 fist size beet, peeled and cut into quarters
2) 1 tomato
3) 1/4 ripe avocado
4) juice of half lemon
5) 3 tablespoons olive oil
6) 1/2 teaspoon sea salt or to taste
7) sprinkle of cayenne pepper or to taste
Blend until creamy smooth. You may add a little water or another tomato to get desired consistency. This is super easy,…everything goes in to the blender and hit go!
This soup tastes absolutely amazing and is wonderfully cleansing for the body. Serves 2.
Banana/Mint Shake Paradise
Add to blender:
1) 1 ripe banana peeled and frozen
2) 1 cup pure water
3) 2 tablespoons Infinity Greens
4) 2 tablespoons hemp seeds
5) 10 drops “Herb~Pharm” peppermint extract
Hit go. Serves 1.
This is total body nutrition refreshment!
Billy’s Famous Chai (not raw,
but still totally health forming and fabulous)
1) Blend piece o’ ginger,
peel and all (approx. size of thumb) with 2 cups water.
2) Add to pot:
2 cups ginger water
4 more cups pure water
1 box (1 quart) rice milk
- 1 cup loose herbal blend of choice. Billy’s recommendation:
equal parts peppermint, chamomile, rooibos, cat’s claw.
Add yerba mate if a little stimulant is needed.
4 tablespoons Sucunat (unrefined cane sugar) or maple syrup
1 teaspoon stevia powder (green and unrefined…if refined,
use less)
3) Add heat to near boil and give a hearty stir and turn heat off….let
steep for 5 minutes.
4) Strain pot with fine wire mesh strainer….perhaps strain
twice to get all the bits out.
Combine with morning meditation and inspirational reading,…this
will set the tone for another wonderful day
